Does Bread replace Sodium?

No. Sodium speeds up how terrain is drawn, Lithium speeds up the game logic, Bread speeds up the things standing in the world: mobs, chests, signs, item frames, dropped items and particles. Use them together.

I have Entity Culling installed

Then Bread leaves hiding things behind walls to Entity Culling and does everything else as usual.

Mobs far away have no armor

That is far_mob_detail_distance (32 blocks). Raise it, or set it to 0 for vanilla: /bread set far_mob_detail_distance 0. The same goes for item frames that disappear far away (decor_entity_distance) and signs (sign_distance).

Does it work on servers?

Everything that makes the game faster, zoom, the FPS counter and /bread work on any server, vanilla ones included. The gameplay tweaks (harvesting, double doors, ladders and so on) need Bread on the server, or singleplayer.

How do I turn it all off for a moment?

/bread off. Everything runs like vanilla until /bread on. Handy to compare your FPS.

What does Bread send?

Anonymous stats through Mycel, only if you allowed them on Mycel's stats screen. What exactly: see Privacy.
